As this year’s IFT FIRST event and expo made clear, food innovation is no longer simply about developing the next interesting ingredient. It’s about solving increasingly complex problems around nutrition, consumer expectations, labor, consistency, cost and speed—without compromising the eating experience.
That convergence is particularly important when it comes to nourishing the foodservice bottom line. The trends emerging from food science laboratories and ingredient companies ultimately have to work in a real kitchen, with real operators facing labor shortages, limited space and pressure to deliver consistent food at scale.
At IFT FIRST 2026, three themes stood out: protein and fiber working together, protein moving into lighter and clearer formats, and the growing demand for simpler, cleaner ingredients that offer a balanced blend of taste, texture and performance.
The interesting question for foodservice is: What technology will allow these trends to move from the lab to the plate?
From Flavorful to Functional
Protein has become mainstream, but IFT FIRST demonstrated that the next stage of protein innovation is not simply adding more grams. Protein is increasingly being paired with fiber, hydration and other functional benefits as consumers look for greater nutritional value from the foods they do eat.
As The Food Institute reported, the shift is especially relevant in a food environment influenced by GLP-1 medications, where consumers may be eating smaller portions and looking for foods that deliver more nutrition per bite. At the same time, operators still have to deliver flavor, texture and visual appeal.
That is where ingredients such as almonds can play an important role. At IFT FIRST 2026, the Almond Board of California, a partner client of The Food Group, showcased California almonds as a critical ingredient for the next generation of food innovation.
By engaging food R&D leaders, startup founders and innovators in the Startup Pavilion, the Almond Board highlighted cutting-edge almond applications while gathering insight into where the market is headed.>
The AM/PM Metabolic Drink, for example, shows how almond milk powder can provide an ideal foundation for trending metabolic drink mixes. Almond milk powder helps ensure great taste and a smoother, more enjoyable beverage experience.
“At IFT FIRST, we showed how almonds provide a versatile platform for solving formulation challenges around nutrition, texture, functionality and sensory appeal,” said Brittany King, Account Supervisor at The Food Group. “From almond hull powder to next-generation product concepts, the Almond Board demonstrated how collaboration and innovation can turn emerging trends into scalable food solutions.”
Technology plays a pivotal role in product innovation. The technology used to prepare, cook and serve food increasingly determines whether innovations can be actualized and amplified.
From Platform to Plate
ConsiderKitchenless, a client partner of The Food Group’s sister agency, Creative Food Solutions. Its approach essentially rethinks what a commercial kitchen needs to be.
Kitchenless provides an intelligent, steam-powered platform capable of delivering chef-crafted meals at the push of a button. Its technology uses QR-code calibration tailored to individual dishes, allowing meals to be prepared consistently without relying on a traditional full-scale kitchen infrastructure.
“This technology gives chefs more freedom to innovate without adding complexity to the operation,” said Matt Joust, Principal Research Chef for Creative Food Solutions. “As food trends evolve, we can respond faster, test new concepts and deliver them consistently, without adding layers of labor, equipment or time.”
The ability to produce consistent, chef-driven food with less equipment and fewer highly trained employees has become a key strategic advantage. To capitalize on the trends coming out of IFT FIRST and other industry events, operators need systems capable of producing those items consistently.
Technology Amplifies Technique
Growing demand for plant-based menu options has made fermentation a focus of innovation. Fermentation has traditionally required time, expertise and tightly controlled conditions. Waring PlanitPOD offers an example of how technology can resolve those challenges.
The PlanitPOD is a commercially approved appliance designed to ferment plant-based proteins, blends and koji with the push of a button. It can ferment and pasteurize up to eight pounds of food in 24 hours, while providing controlled conditions that make fermentation more accessible to chefs and operators.
That matters because fermentation is not simply a trend; it’s a tool for creating the sensory characteristics consumers increasingly want. Koji, for example, can add umami, complexity and subtle sweetness, potentially helping plant-forward foods deliver a more satisfying eating experience.
